Whole, Half, Quarter Beef

Custom cut whole and half beef are available. We have both Grass-finished beef and Grain-finished beef. We can do orders for quarter beef. The price is slightly higher as we have to make sure that both front and rear quarter cuts are included in each order.

Custom Order Pricing

The total cost includes an animal cost (based on the hanging weight) and a processing fee.

The per pound cost is subject to change.

The current animal price is $3.70/lb hanging weight (subject to change) and the current processing fee is about $600.

Total out-of-pocket cost is about $3190 ($3.70 times 700 lbs, plus $600).

Payment

We require a deposit of $500 for half, $1000 for a whole beef as it is a large investment by both producer and customer. The balance is due when the animal is delivered to the processor.

Process

The beef dry-ages for 14-21 days before it is custom cut to the customer’s specifications (we send you a cut sheet and will go over it with you to answer any questions). The meat is then vacuum sealed and flash frozen.

The customer picks up the meat at the processor, and pays for the processing at that time.

Yield

Pricing is based on hanging weight. This is different than final take home weight. Hanging price includes bones and organs, whether or not you want them. Final weight depends on what cuts you order, and how much bone and fat are removed.

You can expect a hanging weight of about 700 lbs and final weight of about 510 lbs.

Cut Specifications

The customer decides which cuts they want, the thickness of steaks, and the size of roasts.

Filling out the cut sheet is often the most confusing for the first time buyer. We will guide you through this process and answer your questions.

Availability

We take and fill beef orders year round. However, we recommend that you place your order several months prior to your desired pick up date as we have to schedule the processing.

Whole & Half Lamb

We sell whole and half lamb seasonally. However, we recommend that you place your order in advance because of demand and scheduling. The ordering process is similar to that of beef. Please contact us about availability and prices for lamb.
